Ingredients:
- 2 lbs. Oshēn Salmon filets
- 1/4 cup diced garlic
- 1 tsp. salt
- 1 tsp. pepper
- 1/2 cup Irish whiskey
- 2 tbsp. butter
- 1 cup heavy cream
- 1/4 cup parsley for garnish
- Matches
Preparation:
STEP 1: In a large pan, melt the butter on medium-high heat. Once melted, add the salmon face down to the pan and add diced garlic.
STEP 2: Cook the salmon for 3-4 minutes or until slightly browned. Next, flip the salmon to the skin-side down and pour the whiskey while carefully lighting a long match.
STEP 3: Once the whiskey flame has gone out, turn off the heat and push the salmon and garlic to one side of the pan.
STEP 4: Add the heavy cream and whisk vigorously to incorporate the whiskey. Turn the heat back to medium-high and continue cooking the salmon until opaque. Ladle the sauce over the salmon as it finishes.
STEP 5: Remove the salmon from the pan and plate. Turn the sauce up to high to reduce for 1-2 minutes. Remove the sauce from the heat and let it sit for one minute to thicken. Pour the sauce over the salmon and serve immediately. Pair with mashed potatoes and a vegetable of your choice.
