Salmon Sarmale -Salmon Stuffed Cabbage Leaves

Sarmale (Salmon Stuffed Cabbage Leaves)
The recipe below is a play on the Romanian staple, Sarmale, however this recipe doesn't incorporate rice or buckwheat into the fold. Instead, cauliflower and salmon are used, giving a bit of a different texture and flavor profile but this rendition of the classic Sarmale is still a crowd pleaser!

Ingredients:

1 Head of Cabbage
1 cup Cauliflower, riced
1 large Onion, minced
4 oz Oshen Salmon, without skin
4 tbsp Tomato Paste
3 tbsp Egg Whites (or Aquafaba)
2 tbsp Paprika
2 tsp Thyme
1 tsp Salt
2 tbsp Olive Oil
2 tbsp Vegetable Broth
Pepper, to taste
Garlic Powder, to taste
Parsley, as garnish
Black Peppercorns, as garnish


Preparation:

1. Steam the cauliflower either in the microwave or on the stove. If using the microwave, simply
add the cauliflower to a glass bowl with a little water and microwave on high for about 5
minutes. If using the stove, let about 1 cup of water come to a boil, add the cauliflower and let it
steam for about 5 – 8 minutes.
2. When the cauliflower is tender, transfer it from the water it's steaming in to a heat-resistant
bowl.
3. Loosely mash the cauliflower to form a “rice-like” consistency and then set it aside.
4. In a deep saute pan, heat the olive oil and then add the onion and cook until translucent.
5. Add the salmon, paprika, thyme, and salt and stir everything together and cook for about 3 to 5
more minutes, until the salmon starts to flake.
6. Transfer the contents of this pan to the bowl the cauliflower is in and then add 2 tablespoons of
tomato paste, the egg whites (or aquafaba), the vegetable broth, and pepper.
7. Throughly mix everything together.
8. Remove the largest leaves of the cabbage head and then fill each leaf with about 2 tablespoons
of the mixture you created.
9. Roll up each leaf and arrange each roll in a shallow baking dish.
10. When all the rolls are arranged tightly together in the baking dish, mix the other 2 tablespoons
of tomato paste with a little water and pour over the top of the cabbage rolls. Feel free to
sprinkle a little garlic powder over the top of the rolls for a little extra flavor.
11. Bake in the oven for about an hour at 300 degrees.
12. To serve, divvy up the rolls onto plate and sprinkle them with parsley and/or black peppercorns.
