  • 1 lb. Oshēn Salmon

  • 2 tbsp. olive oil

  • 2 cups almonds (peeled)

  • 2 cups of water

  • 2 tbsp. butter

  • ½ cup white wine

  • ½ cup chicken stock

  • 1 lb. asparagus

Preparation

Add a hint of elegance to your favorite fish by preparing this salmon recipe in white wine sauce.

Perfectly paired with a crisp glass of Malbec, this deliciously creamy dish is easily put together with a handful of ingredients—many of which you likely already have at home.

If you’re not a fan of asparagus, consider adding any vegetable of your choice.

Salmon in White Wine Sauce

Step 1

Preheat oven to 400 degrees. While the oven is heating up, begin to blend the almonds with water until the mixture turns to a milky consistency. Then, put the almonds aside. (This will be used for the almond sauce to garnish later on.)

Step 2

Once the oven is heated, place salmon filets downside-up and add 2 tbsp. of olive oil. Cook for 3 minutes.

Step 3

After 3 minutes, flip the fillets and cook for another 2 minutes.

Step 4

Now on the stove, combine the salmon on medium heat with white wine and chicken stock. This allows the fat from the fish to blend with the flavors of the chicken stock and wine. Then add the almond milk.

Step 5

Once the salmon and sauce have been reduced by half, add 2 tbsp. of butter and put the pan either aside or inside the warm oven.

Step 6

While the salmon is aside, heat up another pan with olive oil to sauté the asparagus.

Step 7

Plate the salmon and asparagus together and enjoy.
