About this recipe: This pesto-stuffed baked salmon takes your taste buds on a journey with its flavorful filling and cheesy topping. The combination of fresh basil pesto, tangy lemon, and juicy cherry tomatoes creates a delightful burst of flavors in every bite. Serves 4

Ingredients:

  • 4 salmon filets (6-8 oz each)
  • 1/2 cup prepared pesto
  • Juice of 1 lemon
  • Salt and pepper to taste
  • 1 cup cherry tomatoes, halved
  • 1/4 cup grated Parmesan cheese
  • Fresh basil leaves, for garnish

 

Instructions:

  1. Preheat the oven to 400°F (200°C). Line a baking dish with parchment paper.
  2. Make a lengthwise slit in each salmon filet to create a pocket for the stuffing.
  3. Spread a generous amount of pesto inside each pocket, ensuring it is evenly distributed.
  4. Squeeze lemon juice over the stuffed salmon filets and season with salt and pepper.
  5. Place the stuffed salmon filets in the prepared baking dish and scatter cherry tomato halves around them.
  6. Sprinkle grated Parmesan cheese over the top of each filet.
  7. Bake in the preheated oven for 12-15 minutes, or until the salmon is cooked through and the cheese is golden and bubbly.
  8. Garnish with fresh basil leaves.
