Yields: 2 portions
Ingredients:
1 ½ cups couscous
2 cups boiling water
2 Oshēn Salmon fillets, skin-on
¼ cup cherry tomatoes, halved
¼ cup red onion, finely sliced
¼ cup feta cheese, crumbled
1 cup cucumber, chopped
½ cup hummus of choice
2 teaspoons lemon juice
Olive oil as needed
Salt to taste
Black pepper to taste
Preparation:
1. Heat some olive oil in a cast iron pan over high heat. Add Salmon fillets and sear
both sides. Then reduce heat to medium and complete cooking. Season with salt and
pepper.
2. In the meantime, add couscous and hot water to a bowl. Cover with a lid and wait for
about 10 minutes. Season with salt and pepper, and mix well.
3. Shred Salmon fillets or cut them into pieces.
4. In a bowl, combine couscous, cherry tomatoes, red onion, feta, lemon juice, and
cucumber. Adjust seasoning if needed. Add cooked Salmon and hummus on top and
drizzle with olive oil.
