Easy, Festive Cranberry Salmon with Spices
Step 1
Heat olive oil in a saucepan over medium heat. Pre-heat oven to 400 degrees.
Step 2
Line a baking sheet with parchment paper. Place the salmon on the sheet, and coat with a thin layer of olive oil. Then evenly sprinkle a dash of salt and pepper, plus rosemary and thyme. Then place cloves of garlic on top and around salmon. Rub garlic on salmon for enhanced flavor.

Step 3
With the oven on 400 degrees, cook the salmon for about 10-15 minutes or until flaky.

As the salmon is baking, continue to heat olive oil in a saucepan over medium heat. Add the shallots and squeeze juice from the orange. Then add cranberries, sugar, white wine vinegar, and water. Stir gently.
Step 5
Increase stove heat to high, and stir until cranberries pop, creating a sauce. Total cook time for sauce generally takes about 10-15 minutes. Remove from heat and set aside.
Step 6
Remove salmon from oven, and drizzle cranberry sauce on top. Add a dash of extra rosemary and thyme seasoning, if desired. Enjoy immediately while hot!
