  • 1 lb. fresh salmon

  • 2 tbsp. olive oil

  • Salt and pepper to taste

  • Garlic powder

  • 2 cups pomegranate seeds

  • 2 cups dried cranberries

  • Red onion, sliced

Marinade Ingredients

  • 3 tbsp. miso

  • 2 tbsp. maple syrup

  • 2 tbsp. olive oil

  • 2 garlic cloves

  • 1/4 cup orange juice

  • 2 tbsp. pomegranate molasses

  • Salt and pepper to taste

Preparation

In the spirit of Christmas, we're cooking up one of our all-time favorite high-spirited meals: Roasted Cranberry and Pomegranate Salmon. It's the perfect balance between sweet and savory with a light crunch. Not to mention, it's a nutritious choice, too!

After all, you're more than familiar with the incredible benefits associated with eating salmon — it's a low-calorie protein packed with omega-3 fatty acids and vitamin B12. Factor in pomegranate, a heart-healthy superfood filled with antioxidants and vitamins, and you've got yourself a winning combination.

Cranberry and Pomegranate Salmon

Step 1

Line a large baking sheet with parchment paper. Pat dry salmon and place skin-side down on sheet. Coat evenly with a layer of extra virgin olive oil, salt and pepper, and garlic powder.

Step 2

Prepare the marinade by whisking all ingredients together in a small bowl. Slice the red onion and save for step 3.

Step 3

Pre-heat oven to 400 degrees. Pour the marinade on the fish, coating it well. Then add a scoop of dried cranberries and pomegranate seeds on and around the salmon on the baking sheet. Top it off with slices of red onion, garnished on top of the salmon.

Step 4

With the oven at 400 degrees, cook the salmon for about 12-18 minutes or until juicy and flaky.

 

Step 5

Remove from oven. Serve with roasted potato and fresh vegetables, such as squash or multicolored peppers. Consider sprinkling extra pomegranate seeds, cranberries, and fresh herbs of your choice for added flavor.
