2 lb fresh Oshēn Salmon filet

1/4 cup Creole seasoning

6 tablespoons Chef Jernard’s Lemon Pepper ranch

1 cup olive oil

1 medium onion finely diced

1 red bell pepper, diced

1 green bell pepper diced

1 cup Panko bread crumbs

1 Cup of Buttery Ritz crackers crumbled

2 large eggs, lightly beaten

6 tbsp mayo
-
1/4 cup minced fresh parsley
Preparation
This year we took part in the Food Network & Channel South Beach Wine & Food Festival presented by Capital One (SOBEWFF®). The festival benefits the Chaplin School of Hospitality & Tourism Management at Florida International University.
We were delighted to be selected by celebrity chef and long-time Oshēn supporter Jernard Wells to supply the salmon for his famed Creole Lemon Butter Salmon Cakes.
The entire dish is so simple and so good! If you’re only cooking for one or two—or you’ve got a bigger crowd to feed—it’s easy to scale the recipe up or down. Check out the recipe below.


Chef Jernard Wells' Creole Lemon Butter Salmon Cakes
Step 1
Dice Salmon into very small chunks and mix salmon, panko, ritz crackers parsley, eggs, onions, bell peppers creole seasoning, lemon pepper, divide and shape into patties.
Step 2
Heat olive oil in a large skillet to cover the cooking surface over medium heat. Sear salmon patties in batches until browned, 5 to 7 minutes per side. Repeat with more olive oil, as needed.
Step 3
You can bake also if desired heat oven to 350 bake for 15 minutes remove let set for 5 minutes a serve with Remoulade Sauce.
