4-Step Tomato, Lemon and Thyme Salmon
Step 1
Pre-heat the oven to 400 degrees. Line a baking sheet with foil or parchment paper. Place the fresh salmon on top, and coat evenly with olive oil and seat salt. Put inside oven and set a timer for 12-15 minutes.
Step 2
Meanwhile, place a medium-sized pan on high heat on the stovetop. Put baby heirloom tomatoes with 2 tbsp. extra virgin olive oil, shallots, fresh thyme, rosemary, and garlic.
Step 3
As soon as the tomato skin starts to break, add olives. Stir gently. Then check on salmon. Remove from oven when meat is lightly flaky and juicy.
Step 4
To plate, layer the sauce at the bottom of a dish and place one salmon fillet on top. Enjoy!
