Salmon Casserole with Egg Noodles Recipe
Ingredients
- 16 oz. medium egg noodles
- 2 TB of oil
- Salt and pepper
- 6 TB unsalted butter
- ½ C thawed frozen peas (thawed)
- ¼ C finely chopped onion
- ¼ C sliced fresh asparagus
- 2 (10 1/2-oz.) can condensed cream of celery soup, undiluted
- 2 tsp minced garlic
- 1 TB dijon mustard
- 1 C milk
- 3 C shredded Cheddar cheese
- 1 Oshēn Salmon fillet
- 2 C soft breadcrumbs

Instructions
Step One
Preheat the oven to 350° F.
Step Two
Bring a large pot of water to a boil. Add egg noodles, and cook until they’re al dente. Drain them, add a little oil (to make sure they don’t stick together), and set them to the side.
Step Three
Heat a pan with oil to medium high heat. Pat your salmon dry with a paper towel, and season it with salt and pepper. Place your salmon fillet on the pan skin-side down. Fry for 3 - 5 minutes, and then flip and repeat for the second side. do the other-side. Your salmon should be a golden brown color.
Step Four
Remove your salmon fillet from the heat and transfer to a plate. Fork the salmon into bite-sized pieces and set aside. Discard the skin.
Step Five
Then, combine 2 TB of butter, peas, onion, asparagus, garlic, dijon mustard, salt, and pepper in a saucepan. Cook until all the vegetables are tender.
Step Six
Pour in the condensed cream of celery soup and the milk. Stir and then allow it to cook until you see bubbles. Without reducing the heat, add your shredded cheddar cheese. Stir it continuously until the cheese is all melted.
Step Seven
Stir in the flaked salmon.
Step Eight
Place the breadcrumbs in a small bowl. Then, melt the remaining butter and add it to the breadcrumbs. Mix until well-combined and clumpy.
Step Nine
Transfer the salmon and noodle mixture into a 9 x 13 casserole dish. Top with the breadcrumbs.
Step Ten
Bake the casserole for 25 - 30 minutes.
Step Eleven
Serve the salmon noodle casserole with your choice of sides. You’re ready to go!
Potential Substitutions and Changes

Switch up the vegetables.
If you’re not this particular mixture of vegetables, you could substitute any of the current veggies for:

Don’t sweat the egg noodles.
If you don’t have egg noodles available, but have other types of pasta noodles in the pantry, feel free to use those. Egg noodles hold up a bit better when reheating and twice baking, but your meal will still be delicious with penne, macaroni, or any other variation of noodle! Just make sure you cook them al dente.
