Mediterranean Salmon Salad with Lemon Dill Dressing

About this recipe: This Mediterranean salmon salad is a refreshing and vibrant dish that combines the flavors of the Mediterranean with the goodness of salmon. The lemon dill dressing adds a tangy and herby kick to the assortment of colorful vegetables and tender salmon. Serves 4

● 4 salmon filets (6 oz each)
● Salt and pepper to taste
● 2 tablespoons olive oil
● 8 cups mixed salad greens
● 1 cup cherry tomatoes, halved
● 1 cucumber, sliced
● 1/2 red onion, thinly sliced
● 1/2 cup Kalamata olives, pitted
● 1/4 cup crumbled feta cheese
● Lemon wedges for garnish

For the Lemon Dill Dressing:
● 1/4 cup extra-virgin olive oil
● Juice of 1 lemon
● 1 tablespoon chopped fresh dill
● 1 teaspoon Dijon mustard
● Salt and pepper to taste

1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
2. Season the salmon filets with salt and pepper.
3. Heat olive oil in an oven-safe skillet over medium-high heat.
4. Sear the salmon filets, skin side down, for 2 minutes until crispy. Flip the salmon filets and transfer the skillet to the preheated oven.
5. Bake for 10-12 minutes, or until the salmon is cooked through.
6. Remove from the oven and let it rest for a few minutes.
7. In a large bowl, combine mixed salad greens, halved cherry tomatoes, sliced
cucumber, thinly sliced red onion, Kalamata olives, and crumbled feta cheese.
8. In a separate small bowl, whisk together extra-virgin olive oil, lemon juice,
chopped fresh dill, Dijon mustard, salt, and pepper to create the lemon dill
9. Pour the lemon dill dressing over the salad ingredients and toss to coat evenly.
10.Divide the salad among plates and top each serving with a salmon filet.
11.Garnish the Mediterranean salmon salad with lemon wedges.
12.Serve the salad immediately, allowing each person to squeeze fresh lemon juice over their salmon and salad as desired.
