Ingredients
- 3 Oshēn salmon filets
- 2 TB dijon mustard
- 1 TB mayonnaise
- 1 TB lemon juice
- ½ tsp grated lemon zest
- 1 pinch of cayenne pepper
- 2 scallions, chopped
- 1 c + 2 TB panko breadcrumbs
- Salt and pepper
- 2 TB olive oil
- Buns
- Desired toppings

Step One:

Prepare a baking sheet by covering it in parchment paper and brushing it with olive oil. Also prepare a grill pan by covering that in foil. Then, preheat the grill to medium-high heat or about 300° F.
Step Three:
Cut the salmon into chunks. Then, put salmon, dijon mustard, mayo, lemon juice, lemon zest, and cayenne into a food processor. Blend until it’s a puree. Place the salmon paste, the scallions, 2 TB of panko, and ½ tsp of salt and pepper in a mixing bowl. Mix with a spoon until it’s all combined.
Step Four:
Form your salmon into equal patties that are all ¾ inch thick, and place them on the baking sheet. Cover the sheet with plastic wrap and refrigerate for 30 minutes.
Step Five:
Remove patties from the refrigerator. Then, put the remaining panko on a plate, and coat each side of the patties in the panko. Your patties are ready for the grill now!
Step Six:
Grill using a fish spatula until golden brown. The fish should flake off easily with a fork when they’re done. Flip and cook each side for about 10 minutes, though cook times can vary depending on the size of the burgers. While you’ve got the grill heated, toast the buns.
